There’s a ton of yummy food in my upcoming YA novel, Rainbow State; and I want to share the recipes so you can enjoy it in real life, not just in reading life!
For this first installment of Rainbow Recipes, I chose desert (natch’). Dessert is always a good place to start and after all, these cookies play a starring role in my book. They are the baking specialty of my main character, fifteen-year-old Jade, and her mom, Bijou.
These Ginger Lime Cookies make an appearance in Rainbow State three times. I thought that I had invented this flavor combination, but when I googled “ginger lime cookies” five years after “inventing” the idea- plenty of actual recipes popped up. (Hello, late to the party as usual!) I chose the recipe that I thought was closest to the look and texture that the characters Jade and Bijou would enjoy, and then I veganized it because #plantpowered!
This recipe was adapted from Through Her Looking Glass Blog. I modified some of the ingredients to make the cookies vegan. They came out perfect and the cows and chickens will thank you for the easy / healthier substitutions. 😉
*** That last step of whacking the pan is so fun- and like magic! The cookies transform in front of your eyes- very satisfying! LOL

Okay, after a day or two of eating these cookies after every meal- I got creative after dinner and introduced some vanilla oatmilk icecream to the equation. Mind blown!
As you may have noticed, my second passion after writing, is baking. Actually, I’m pretty passionate about all yummy plant based food.
